I'm back with Tofu-Pineapple-Orange Stir Fry

Where was I, do you ask? In a land of confusion; with ambivalent thoughts and with my dexterous hands empty. I couldn't write; I wasn't motivated to cook or experiment. My chow tools were rusting for the past 3 months and so was my enthusiasm (You know how life becomes a B*^<#, right? ).  I traveled, read a little, met a lot of people and saw lots of TV. And of course, I sobbed, prayed and did some introspection as well. I realized, I just needed some time, so I gave my self that. Everything in life is ephemeral, as Jesus aptly said, 'This too shall pass'. An apropos remark considering the present phase of my life.



I am doing pretty well than before now. I am feeling light and much more focused than I was before. So I decided it was the right time for me to write. To keep me going, Avi got me a great gift last night: A beautiful S95 camera! (Je vous aime AEVI). Therefore, with all the alacrity, I cooked up a dish that relates to the lessons that I had learnt from life past three months:

Live light and be happy: Tofu
Have tang in your life. Always: Pineapple, White Vinegar and Orange Rind
Have a busy life with loads of  different things to do. Things you love and surprise yourself: Ginger, Garlic, Onions and Paprika.
Don't take things too seriously, But always consider them: Sugar, paprika- taken with a pinch of salt! :)


I looked around for recipes from a Helen Aiteken Book. This recipe is changed a tad to suite my taste buds, nevetheless, your palate will find it heavenly.

Ingredients:
1 cup of extra firm tofu, cut in half inch cubes
1/2 cup of fresh pineapple cut in half in cubes (should be with the same size as the tofu)
3 tbl spns of olive oil  to fry the tofu
2 tsp olive oil to shallow fry
1 inch of ginger grated
1 large pod( 3 small pods) of garlic grated
1tsp of fresh orange rind
1/3 cup of red onions slit thin
1 tsp of brown sugar
1 tsp of vinegar
1 tsp of paprika (or red chili powder)
salt to taste


 Method:
Shallow fry the tofu with 3 tbl spns of oil in a wok until they turn light brown in color
Drain them in a tissue papper and discard the oil.
Add 2 tsp of olive oil and keep the heat at high.
Add onions, garlic, ginger and fry for a min. Reduce the heat to medium.
Add the orange rind, paprika, salt, vinegar and sugar. Fry well for a min.
Add the pineapple pieces and fried tofu.Toss them well and let them imbibe the flavors for about 2 mins
Serve hot.

Very nice recipe and the way you put various stages of life into the dish...hummmm engineers are good philosophers too.
