A Soul Transformation: Spiced Lentil Stuffed in Banana Peppers


A soul transformation formation for banana peppers. Yes, you are thinking right. The banana peppers in my refrigerator had an epiphany (Spiritual); Peppers in an Indian cuisine manifestation.My palate also experienced an epiphany (Complete essence); it was soul satisfying to taste the sweet-hot crust of banana peppers with spiced-mashed lentils filling.

We went to ballet today and had a lovely mousse treat at Mrs. London's. What a satisfying day it was; with NYC ballet center performing Shakespeare's "Midsummer Night's Dream" and a creamy chocolate mousse did it all for us.Ending the day watching Aviator while devouring the peppers with saffron rice was indeed soul satisfying.

Ingredients:-
6 banana peppers
1/3 cup of chopped onions
1/2 cup of yellow mung lentils cooked until mashed
1 tsp red chilli powder
1 tsp cumin seeds
1 tsp of oil
1/4 cup of chopped fresh coriander
1 tbl spn of fresh lemon juice
salt to taste

Ingredients:-
Chop all the banana peppers into half at the center.
Scoop off the seeds from each of the halves and keep aside.
In a pan, heat oil and add cumin seeds. Wait for them to sizzle.
Add the onions and fry them until soft.
Add the mashed lentils and fry for about a min with salt and red chili powder.
Take off the heat and cool.
Add coriander leaves and lemon juice. Mix well.
Stuff the peppers with lentil mixture.
Heat 3 tsp of oil in a shall frying pan and fry the leppers evently on all sides until the crust is cooked.
Drain the extra oil on the peppers using a kitchen tissue.
Serve hot!
