Tested and it works. I made this burfi and it does freeze for 2 weeks easily. All Avi needs to do is thaw for 15 mins and heat in the microwave for 20 secs in high. This makes an excellent evening snack or dessert for him. The taste doesn't change and it smells fresh. Wrap them individually in a plastic wrap or aluminum foil so that they do not stick together and break while thawing. Freeze the wrapped burfis in a zip lock and you are good to go for a fortnight holiday without worrying your for your hubby's evening snack. They do not have a bad smell or anything. Remains fresh and safe. Besan sweets are my favorite and recently Avi is got found of them too.
This goes to my own event "Home Alone-Rescue Avi" Gourmet Event.
Ingredients:-
1 cup of besan/chickpea flour
1/4 ghee + 1.5 tbl spn
1/3 cup chopped pistachios and Almonds
1 cup of sugar (depending on one's taste)
Pinch of cardamom (do not add more as besan itself has a nice flavor and too much of cardamom will supersedes the nice besan flavor)
1 tsp of ghee to grease the tray.
Method:-
Melt 1/4 cup of ghee in a wide heavy bottom vessel and add the besan.
Keep the flame at medium and start roasting the besan. Stir continuously or else the besan will burn.
Keep roasting until a lovely aroma of roasted besan surrounds the kitchen. Roast the besan until it becomes deep golden brown.
Reduce the flame to low. In another small pan, heat the 1.5 tbl spn of ghee and add the almonds and pistachios to it.
Fry the nuts for 30 secs and add this ghee-nut mixture to the besan mixture.
Add the pinch of cardamom, sugar and mix well till they are well incorporated in the besan. The mixture shouldn't be too dry. If it does look too dry to spread, add 1 tbl spn more of melted ghee. The mixture shouldn't be runny either as it will not solidify into burfis/cakes. Hence, be careful when you add the extra ghee.
Grease an 1/2 inch tray with ghee.
Spread this mixture in an 1/2 inch tray and refrigerate for 15 mins. You may keep it in a cool place for half hour too but refrigerating gets the job done faster.
Let the burfi rest for another 15 mins outside and then cut into even squares and serve at room temperature.
For storing over a fortnight period:-
Wrap the burfis individually in plastic wraps and store in a zip lock in the freezer. Before serving, thaw for 15 mins, remove the wrap for a burfi and heat in the microwave for 20 secs.

Lovely Indian sweet.Love the Pistachio topping. I am a bit worried about trying any Indian sweets cause proportions and texture are all important. My MIL is coming for a visit in 2 weeks and I am going to grab hold of her and ask me to teach stuff.

you can also try to make til laddoos, and namkeens for his snack-time (like mathdi, chekkalu etc); i'm sure they'lll last up to a month if stored in airtight containers...
