All in One-Pot Wonder at anytime- Poha Rani!

I fussed, fretted and pouted every single time I looked at my breakfast-milk and dry fruits. It was a nightmare for me to finish and for my mom to wait for me to finish. Hence, one day we agreed to reconcile our disparities. I told her I would have dry fruits if she doesn't give me raw and add it in some coveted dish of mine. She agreed. She thought pulao was too early in the day to have, kheer was impossible to make early in the morning and adding them in cornflakes made no sense as they are still raw. She looked at me and saw me silently devouring her poha/avil upma and got this brilliant idea-Poha Rani. Why Rani? My mom proudly avers that she made such an unpretentious dish so embellished. It was like an empress's meal. Rich it is but healthy too as it is devoid of unsaturated and trans fat.

This poha was usually my breakfast as I grew up but slowly started to appear in my lunch box when I started to work. It is very healthy with all the goodness of nuts and dry fruits and yet, light, without much of  the usual Indian grease (oil or ghee). It was so ideal when I wanted something light and yet filling during my office hours and not once did it make me feel drowsy after lunch. My dad would have it with a cup of tea during twilight everyday. He has a penchant for poha rani and feels it is a good way to avoid deep fried snacks or snacks laden with butter/ghee.

The best condiment to this Poha rani has to be raita (spiced yogurt) or plain fresh curds made at home. It became our all around the day food. My mom would devour it at breakfast, while me at lunch and dad at tea time/supper. It was truly a one pot wonder with hot n sweet n sour sensation tickling one's palette at the same time. Truly a one pot wonder with everything at anytime.

Serves one hungry fussy kid!

Ingredients:-
1 cup of thick Poha/flattened Rice
3 tsp of oil
1 tsp of mustard seeds
1 tsp of jeera/cumin seeds
1/3 cup of chopped onions
1/4 cup of cooked potatoes chopped finely
1-2 tsp of lime juice
1 tsp of broken cashew nuts
3 almonds
3 peanuts
3 pistachios
3-4 raisins
2-3 curry leaves
3 green chillies finely chopped
1/4 tsp turmeric powder
1/2 tsp of grated ginger
1/4 tsp of sugar
salt to taste

Garnish:-
Chopped coriander leaves
1 tbl spn of fresh grated coconut (optional-I avoid it as there is already enough sweet with raisins. I add coconut with normal vegetable poha/Avil Upma)

Method:-
Clean the poha in hot water 2-3 times and set aside in a colander (with tiny holes).
Heat oil in a pan. Add the mustard seeds and jeera. Let the mustard seeds start to splutter.
Add the curry leaves, onions, green chillies, ginger, turmeric powder and potatoes. Fry them well till the onions get transparent.
Add the peanuts, almonds, pistachios, cashews and raisins. Fry then for about 1 min. Still frequently.
Add the poha, salt and sugar. Keep the heat at low and mix well. Cook for about 2 mins while stiring every 30 secs.
Remove from heat. Let it cool and add the lime juice.
Garnish with chopped coriander leaves.

I love the version from Benaras and Bihar; and it can be tweaked endlessly. Boondi Raita would work too!
