A Quickie Cocoa Brownie ;)


I have tried a zillion brownie recipes and trashed them after having a piece. Either they are over complicated or they just don't taste like a brownie. This recipe my mom's friend gave me was chewy and soft with a perfect brownie like crust. If you are a brownie fan, you will love this recipe and you will love it more for it's simplicity!

I made this in a jiffy and Avi finished an 8x8 brownie in the same speed and alacrity with which I made it. This recipe is simple, yumm and you can do a lot of variation to this one!  After noticing that the brownie had disappeared, I decided to make desserts only when guests show up as the number flashing on our weighing scale doesn't make us smile a bit.

As this is my 201th post, I though starting the next 100 posts with a sweet note. I am normally not a sweet person; savory is more my style. But this brownie is something even I can't resist. It is quick, adaptable and yummy! You got to be a dud to mess this simple recipe.

Ingredients:-

1/2 cup of butter
1 cup  sugar
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour/maida
1/4 tsp baking powder
2 eggs
1 tsp vanilla extract
pinch of salt
1/4 cup of chopped nuts of your choice/chocolate chips (for a nutty brownie or double chocolate brownie) - This is optional. You can make a simple chocolate brownie by avoiding this ingredient too.

Method:-
There is no need to use an electric beater in this recipe. All you need is a whisk and a stirrer.
Preheat the oven to 350 F
Melt the butter and blend in the sugar well in the melted butter with a stirrer.
Whisk the eggs and add them to the butter-sugar mixture. Mix well with vanilla essence.
Add the chocolate powder and flour a ladle at a time and stir well until the batter is smooth and no lumps can be found.
Add the nuts or chocolate chips if you wish. Although this is optional.
Grease an 8x8 pan and pour the batter.
Bake for 25-30 mins until a toothpick inserted at the center comes out clean. Do not over bake as this spoils the taste and texture of the brownie.
Cool for about half hour and then cut them into squares.
Relish the sinful chocolate brownie!
