Avi and myself get crazy during the weekends decluttering stuff and cleaning the fridge. Guess we haven't got out of the bachelor/spinster life. We like our fridge clean and empty! Hence, we go grocery shopping twice a week and get stuff that will last only a week. Yes, even ketchup (I finish it in a week) and oils. The only thing that last more than a week are legumes/lentils.
I got super excited when Nupur posted her "for the month" blog bites theme-using stuff in the pantry/freezer/refrigerator that has been there for quite sometime unused. Last Sunday I felt terrible. I had got some extra firm Tofu and button mushrooms to make pad thai style noodles but didn't end up making as we left to Boston for the weekend. The itch was strong to get rid of them before I went to price chopper for this week's grocery. I pondered...wondered...and there that bulb above my head started to glow (I had an idea!!!). Last october was the first time I visited UshnishDa's foodie space and he has posted awesome looking Chicken 65 (yes, yes, the Madras's Buhari Hotel style). It looked so very yummm...and it was still in my 'sure to make' list. I am a veggie but UshnishDa gave me confidence saying I could make it yummy by using paneer too. Well, I decided to make it with my extra firm tofu and mushrooms. This is how out comment conversation went:-
- its come out so perfect!!!! I love the step by step pictures and I love the recipe.I am a veggie, but i know when a dish is perfectly cooked. Love your prelude too..the story..the recipe...Nice!
- Dear Preeti I feel good, you liked the recipe and the description. Doesn't matter if you have become vegetarian. Try with Paneer or small veg. pakodas. If you have given up egg too, don't worry...mix 50:50 of corn flour and Maida ( wheat flour), take 3 level tsp of it in 200 gms paneer pieces, sprinkle water and mix. Fry it out and proceed. The sauce is the main thing. It will be great taste. Will be visiting your space shortly...Must be some exciting recipes waiting for me.. best wishes and happy cooking
- Hey thanks Ushnish! I shall try it. I do eat eggs though.
Verdict:- It was yummy and tasty, just as it is supposed to be. My hubby who is not found of tofu that much said, "lets buy tofu every week and make this". Thanks UshnishDa for the coveted recipe!
Ingredients:-
For marinade:-(you may need more or less of this marinade paste depending on the number and size of the tofu cubes)
20 pieces of extra firm tofu cubes
1 tbl spns of corn flour
1 tbl spn of APF/maida,
1 tsp ginger-garlic paste
1 tsp red chilli powder
salt to taste
****
1/3 cup of chopped mushrooms
1 medium sized onion chopped
4 green chillies chopped finely
6-7 curry leaves
1/4 tsp jeera/cumin seeds
2 large pods of garlic grated
1 inch ginger grated
2 tsp vinegar
1 tsp soya sauce
1 tsp black pepper powder
1 tsp red chilli powder
1 tbl spn chilli garlic tomato sauce (or regular ketchup)
pinch of msg (optional)
pinch of red food color (recommended)
salt to taste
*****
Oil to deep fry the tofu
1/4 cup oil to make the sauce
Method:-
Mix the flours, salt, ginger-garlic paste and red chilli powder. Add water to make a thick batter. Soak the tofu cubes for around 15- 30 mins.
Coat the tofu cubes well with the batter. Do not mix with a ladle or handle, as they tend to break. Take a tofu cube. Dip it in the batter completely and deep fry. Keep the fried tofu aside on a kitchen towel.
Heat 1/4 cup of oil in a wide pan.
Add cumin seeds, onions, ginger, garlic and curry leaves. Fry well for 2 mins.
Add the mushrooms, green chillies, vinegar, soya sauce and red food color. Mix well and cook for a min.
Add the tofu cubes, pepper powder, chilli powder, chilli-garlic-tomato sauce and salt to taste. Mix well and fry for about 2 mins till the sauce and vinegar-onion mixture is well coated on to the tofu. The tofu should imbibe all the flavors and the crush should become crispy.
Take it off the heat and serve hot.
Tada! Relish as an appetizer or with parathas! This goes to Nupur's BB-4.
