Impromptu Curried Paneer/ Curried Cottage Cheese

This recipe is neither inspired from any dish nor is it a traditional heirloom recipe that I can indulge you in my ranting by discussing its history. This is my recipe. I turned ravenous in hunger today and wanted something super quick and yum. I did not have time to think of a recipe. I have a few paneer cubes and stared to make a paneer dish with out knowing where I was going. But the end result was yummmm and because of its unique blend of spices and sauces, I called it Curried Paneer. I am sure this impromptu recipe with surprise you too.

I usually make good food only when my family or friends are around. If alone, I am happy with cereal, maggi noodles, upmas or sandwiches. This time I was alone and wanted to pamper myself with good food. I came early from university and wanted to eat something as I read through Kim Edward's, "The Memory Keeper's Daughter"(It is a page turner!) and I wanted to eat something nice, soothing and warm. Sometimes it is fun to spend time by yourself and to do your own thing. So girls, enjoy your own company. Love and cherish yourself!

Serves: One lucky Person

Ingredients:-
5-6 cubes of fried paneer (If not fried, shallow fry the paneer till golden brown).
1 inch of grated ginger
1/4 inch of cinnamon
2 cloves
1/4 tsp of ginger-garlic paste
1 tsp of soya sauce
1 tbl spn of tomato ketchup
1 tsp of curry leaf powder
1/2 tsp of roasted cumin powder
1/2 tsp of red chilli powder
2 green chillies finely chopped
1/4 of an onion chopped
1 tsp of oil
salt to taste

Method:-
Heat 1 tsp of oil in pan and add a cinnamon, cloves, ginger and garlic.
Fry the above with chopped onions and green chillies. at medium flame.
Add the ginger-garlic paste, curry leaf powder, cumin powder and red chilli powder. Fry them well for a min.
Add the soya sauce, ketchup and paneer, salt to taste.
Add 1/4th cup of water and cook till the curry comes together and the paneer absorbs the flavors of the curry.)
Garnish with chopped coriander or green onions (spring onions greens)-Optional.
You can have this dish as a starter or with roti/chapati. If you feel you have added a lot of water and the curry is too thin, add 1 tbl spn of cornflour mixed in cold water and add to the curry. It will thicken in no time :)
