A Very Very Happy Pongal/ Makarashankranti to all of you !

I missed my home terribly today. We celebrate pongal in a grand way; my dad decorating the pooja room and mom cooking yummm food. He is very creative and has a great aesthetic sense. Most importantly, he is an adept designer (from interiors to rock gardens) . My mom could easily pass as an adroit chef, she is quick and makes yummm food. But sakkarai pongal was thought to me by Priya chitti. I was with her during 2007 pongal and she makes the best sakkarai pongal I have tasted.

To give a divine touch to your sakkarai pongal, do add the edible camphor. The edible camphor will make the sakkarai pongal the most apt and best Prasadam ever.

So here is the recipe,
Ingredients:-
1 cup rice
1/2 cup yellow moong dal (split and husked green gram)
1/4 cup ghee or more
1 tbl spn of broken cashews
1 tsp of raisins
2 cups of water
pinch of edible camphor (optional, but recommended)
1/2 tsp of cardamom powder
1 cup of jaggery
pinch of salt

Method:-
Cook the rice and dal in 3.5 cups of water.
Melt the jaggery in water in a pan.
Heat the mixture till it reaches one string consistency.
Add the salt, edible camphor and cardamom powder
Mash the cooked rice and dal and add it in the pan.
Mix well and cook in medium flame. Keep stirring for about 5 mins. Take it out of the heat one the reached the right consistency (it could be in dropping consistency).
Heat the ghee and fry the raisins and cashews until golden brown.
Add to the pongal and mix well.

Lastly, My Sun God (the red opaque circle inside the chariot) in his chariot kolam. I know know, I am pretty sad at rangoli and kolams, but this has been my best kolam ever and I am mighty proud of myself.
