A Gift, Some Beans and A Something Light Salad




I have been crazy busy with work lately and not to mention my fatigue and ill health past a week. Its been a turmoil, my life. But hey, there is always a silver lining and this time the lining was Susan. A GIFT-Thanks a lot Susan for the wonderful book. Its such a great encyclopedia on food and one always needs reference. I won't forget to take the book while seeing Top Chef. I sometimes wonder and ask my hubby,"what the hell are they actually making?". Thanks a lot Susan, this is one precious gift I will cherish forever. SOME BEANS-Thanks to the Hurst Beans to be kind enough to mail me those wonderful 6 bags of beans.

Now its time for " A SOMETHING LIGHT SALAD"


Here are the ingredients:-

Dressing:-
1/2 tbl spn white vinegar
1 tsp extra virgin olive oil
2 Tbl sons corn syrup
2 Tbl spns Parmesan cheese (avoid if you are watching your weight)
¼ tsp garlic salt – or one clove garlic, grated
½ tsp Italian seasoning
½ tsp parsley flakes
1 Tbl spn lemon juice

Salad:
1 cup of romaine lettuce
1 small sized red onion sliced thin
5-6 black olives
2 banana peppers
2 small tomatoes, quartered
4-5 croutons
freshly crumbled feta/goat cheese

Mix all dressing ingredients.
Chill one salad bowl in freezer for at least 30 minutes. Put lettuce in bowl. Place on top of lettuce red onions, black olives, banana peppers, tomatoes, and croutons. Add the dressing on top and relish.
