Chocolate Almond Healthy Cookies

Cookies and healthy? Well, yes, Comparatively. Some cookies are full of butter, maida/bleached ALP, sugar and cream. They do taste good, but they do not add any nutritional value to one's health. So I decided to make my morning "cookie n cuppa coffee" ritual somewhat healthy. These cookies did come out great. They were soft and tasty, but do not expect them to melt in your mouth.

Before I go to the recipe, I want to share with all my readers something new my palate got to taste. We were invited to our dear friend Osama Saadeh's residence (He is from Jordon) for relishing some of his authentic middle eastern sweets that he had got from Dallas. It is called Knafa, shredded dough on fresh cheese slab, garnished with pistachios. It tasted awesome! It just melts in your mouth. I also got hooked on to the dates cookies he offered us. Ingredients:-
1/2 cup of canola oil
1/4 cup of wheat flour
1 cup of unbleached all-purpose flour
1-large egg yolk
3 tbl spns of nestle cocoa (depends how strong you want the flavor to be, taste it and see. I don't like it too strong as I have it with coffee)
1/2 cup of granulated sugar (I decreased little bit of the sugar level)
10-crushed almonds (I crushed them real small, so you cannot see them)

Method:-
Whisk the oil, sugar, cocoa and egg yolk until it gets smooth and fluffy.
Add the flour and mix it well.
Add the crushed almonds and mix well.
knead with your hands.
The batter now will become a brittle dough (its not going to be elastic like roti dough).
Take a tble spn of the dough to make a round ball and press it to flatten or use a cookie cutter of your size.
Preheat the oven at 325 F.
Bake for half hour to 40 mins. Keep checking every 5 minutes after 20 minutes of baking as the baking also depends on the size of each cookie. Be careful not to burn them. Check how brown the bottom of the cookie is.
