Its been quite a dull and lethargic week. Its been raining almost everyday and the weather is perfect to put one to sleep at any time of the day. I made these for evening tea and they were simply crispy and flavorful.
I found this lovely wishing well as me and Avi were driving around the city. It was situated in an empty backyard of a huge house. It looked old and I guess it was an inherited property. I had never seen a wishing well behind a house (usually notice it at tourists spots) and was thrilled to see how well "the well" was maintained.

Ingredients:-
2 large potatoes cook and mashed
1/2 medium sized onion chopped
2 tbl spns of grated beetroots
1 tsp of red chilli powder
1/2 a tsp of garam masala
1/2 tsp of chat masala
5-6 mint leaves chopped finely
5-6 coriander leaves chopped finely
1 tbl spn of ginger-garlic paste
2 tbl spns of oil.
1/2 tsp of mustard seeds(optional-adds a lil crunch)
salt to taste

Batter:-
1 tble spn of all purpose flour
2 tbl spns of cornflour
1/4 tsp of crushed pepper
water
salt to taste

Enough oil to shallow fry.
Garlic flavored cream cheese (amt as desired)
1/4 cup of bread crumbs
Method:-
Mix the ingredients for the batter. It should be pouring consistency.keep aside
Heat oil in pan.
Add the onions and ginger-garlic paste. Fry well till onions get transparent.
Add the mashed potatoes and beets. Fry well with the masalas and salt
Add mint leaves and coriander leaves.Fry for a minutes or so.
Allow this mixture to cook for around 10-15 minutes.
Take a ping pong ball sized potato mixture. Roll the ball to make it smooth and then flatten it (like a patty).
Coat it with a layer of batter on all sides and roll on the bread crumbs.
Shallow fry keeping the flame on medium heat till they are light brown and crispy.
Allow to cool for a minute. Spread the cheese and relish it.
