These are truly yummy and perfect breakfast/brunch/snack. Actually you can gobble a whole one down anytime of the day! Tradition crepes are of French origin. You may make a stuffed crepe a savory (as below recipe) or sweet by stuffing fruits, fresh whipped cream and jam. The filling is truly a personal choice :).
Ingredients:-
1 Cup Whole Wheat Flour/ All Purpose Flour
1/8 Teaspoon Salt
2 Eggs
1 Cup Milk
2 Tablespoons Unsalted Butter, melted
Stuffing:- (for one crepe)
5-6 leaves of baby spinach chopped
1/4 cup of mozzarella cheese (or as much you want )
5-6 quartered mushrooms (I used baby Portabella mushrooms)
1/2 small red onions sliced
dash of tobasco or any chilli sauce
salt to taste
Method:-
Whisk the ingredients for crepes to make a smooth batter. Should be a little watery (pouring consistency- a lil thinner than dosa batter)
Heat a skillet and keep it at medium flame.
Pour one ladle full of batter.
Make a thin round later by swirling the pan so that the whole pan bottom has a thin layer of crepe batter. (or make a thin round dosa by swirling the batter with a round ladle.)
Cook till golden brown in both sides.
Remove and cool.
Stuff the crepe and bake in the oven at 350 F for 8 minutes. (you may make roll with stuffing or just place the stuffing on one half and cover with the other half-your call)
Serve with ketchup and cheese.
