Poha/Avil Upma













Light and yummy breakfast.

Ingredients:-
3 cups of poha/avil/flattened rice cleaned and washed
1 medium onion chopped
1 tsp mustard seeds
1 cup of veggies (potato, carrot, beans,peas,capsicum-all chopped finely)
1/4 tsp turmeric powder
1 tsp of grated ginger
4-5 peanuts (optional)
1 tbl spn of lime juice
2 green chillies finely chopped
6-7 coriander leaves finely chopped
2 tbl spn of oil
1 tbl spn of grated coconut
salt to taste

Method:-
Heat oil in pan
Add mustard seeds and wait for them to crackle.
Add onions,ginger,green chillies and peanuts and fry well
Add the veggies and cook well for 5 minutes
Add the poha/avil, salt and turmeric. Cook for 5 minutes.
Add coconut and lime juice. Mix well for a minute.
Garnish with coriander leaves.
