Eggless Chocolate Muffins!... Happy B'day to me!

Who says eggless cakes don't taste good ? I was one of the strong believers that cakes without egg might taste like sand for sure. But I surprised my self on my birthday! This yummy recipe was inspried by Nags of Edible Garden.

My dear husband did the favour of putting up the candle and singing happy bday for me at midnite. Yipeeee...Happy B'day to me!

Ingredients:-

2 cups of All purpose flour
1 cup of sugar
1 tsp of vanilla essence
1/2 a cup of unsweetened cocoa powder
1 tsp of baking soda
1/2 a cup of milk
1/2 a cup of vegetable oil
1 cup of water
pinch of salt

Method:-

In a large bowl, sift together flour, cocoa, baking soda and salt.
Add sugar and mix well
Add oil, water, milk and vanilla essence and churn well with a batter spoon in one direction.
Keep muffin paper cups into the muffin oven tray and fill these cups eith 3/4 of the batter.
Preheat the oven to 350 F (175 C) and once done, keep the tray in for 30 minutes.
Insert a toothpick and see if it comes out clean. If it does, then its ready. If not, keep for another 10 minutes or till the toothpick comes out clean.
