I love kalanda saadams (mixed rice). They are yummy,healthy and quick. while schooling, my paati would always pack one of these rice dishes for me with vadaams. They are ideal for lunch boxes.
They are light and filling; perfect for dinners. They don't spoil fast and quick to make. Thus making them perfect for train journeys and picnics. You will always spot kalanda saadams, wrapped up in banana leaf and news paper, brought by people when they are traveling in trains or when they are with their families in picnic spot (go see kutraalam water falls..hehe). They are usually accompanied by pappads/pappadaams, chips/wafers or vadaams.
Ingredients:-
2 cups of basmati rice cooked with 2 cups of water (the rice should be separate and not sticky or over cooked)
3 dried red chillies
1 green chilli (optional)
1 inch ginger grated
1 cup or more grated coconut.
1 tsp mustard seeds
1 tsp urad dal
1/4 channa dal (bengal gram)
5-6 broken cashewnuts
few curry leaves
salt to taste
3 tsb spn of oil/ghee
pinch of asafoetida
few coriander leaves chopped to garnish
Method:
In a pan heat the ghee/oil.
Add mustard seeds and wait for it to crackle. Add asafoetida.
Add urad dal, chana dal, curry leaves, red chillies, green chilli, ginger and cashews. Fry till the urad becomes golden in color.
Add the coconut and fry till golden brown.
Add the rice and salt to taste. Mix well in low flame for a min or so.
Garnish with coriander leaves.
