Bruschetta

Bruschetta
(Italian pronunciation: Brus-ketta ) is a food the origin of which dates to at least the 15th century from central Italy. It is a lovely appetizer or snack. It consists of grilled bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper. Topping may include bell peppers, vegetables, tomatoes, beans, cured meat and cheese- it is truly your call.

Ingredients:-
10 slices of Baguette (actually any italian/fresh bread)
10 tsp of salted butter (or extra virgin oil-if u want it healthier)
large garlic pod

Topping:-
1 large tomato (take out the seeds and chop)
1 medium sized onion chopped
1 medium sized bell pepper chopped
10 baby portabella mushrooms quartered
1 tsp of ground pepper
1/4 tsp of each- rosemary, chives and thyme
1 tsp of olive oil
salt to taste

Cheese coating:-
1 cup of mozzarella cheese- you may mix it with cheddar too.

Method:-

Fry the onions, tomatoes, mushrooms with the herbs, olive oil and salt in low flame till they are cooked. Keep aside and let it cool.
Melt the butter and grate the garlic pod (very very fine) into it.
Smear this butter-garlic mixture on the baguette.
Place 1 tbl spn full of topping and generously coat the topping with cheese.
Bake it @ 350 F for 10 minutes or till the cheese has melted.
Let it cool for about 5 minutes and serve with ketchup and chilli flakes.
