Beans-Carrot Curry/Fry/Poriyal


Ingredients:-
30 green beans chopped
2 medium sized carrots chopped
5 tbl spns of grated coconut
1 tsp of mustard seeds
1 tsp of urad dal
1 tsp of cooking oil
1/4 tsp of turmeric powder
3-4 curry leaves
3 dried red chillies
salt to taste

Method:-
Heat oil in a pan and add mustard seeds. Wait for them to crackle.
Add the urad dal, red chillies and curry leaves. Fry till the urad becomes golden brown.
Add the beans and carrot into the pan. Sprinkle water and cook closed for 5-7 minutes in medium flame. Stir occasionally to avoid the beans from getting burnt. Cook till they are soft.
Add the turmeric powder and salt.
Add the coconut and cook for another 3 minutes.
Serve hot.

Looks colorful and delicious ! Thanks for visiting my site and your comment, regarding the oatmeal bar it was soft and chewy, not like cake soft more like chewy bread. I did not miss the eggs at all, oatmeal tends to make bakes softer so I guess that is why the eggs were not missed...
