Shahi Tukra is a truly Mughlai Dish. "Shahi Tukra" meaning Royal Piece is a really rich and creamy sweet dish, easy and simple to make. This is always my pick of sweet when guests turn up giving me a short notice.
Shahi Tuka is an Indian Mughlai dish, which has been influenced by Persian Cuisine. It is an Indian version of the bread pudding from the west world. It is a rich dish where in you roast the bread in ghee and dip it with rose water syrup and dress it with a thick milky sauce, saffron and dry fruits.However, very very simple to make.
Tip:- Try not using freshly baked bread, as it soaks in a lot of ghee while deep frying. You can shallow fry in ghee if you are watching your weight, but deep frying is ideal.
I have made a quick rabdi in a microwave. You may also do this the traditional way (just that it takes time).
Ingredients:-(serves 2)
Two slices of bread, cut into triangles. So that would make 4 triangles, 2 per plate.
2 cups of milk
1/2 a cup of cold milk with 1 tbl spn of corn flour and few stands of saffron. soak this for half an hour.
sugar to taste
3 tbl spns of ghee/clarified butter
cardamom powder to sprinkle on each plate
few almonds and raisins to decorate
1 tsp of rose water
1 cup of sugar syrup
Method:-
Reduce the milk with sugar in the microwave to half of the original quantity. (be careful, don't let it overflow-turn it on for 2 minutes...let the milk rest....then turn it on again for 2 mins...do this till the milk is reduced). Make sure you pour the milk in a large container. So that it doesn't easily overflow.
Mean while, deep fry the bread triangles in ghee till they become light golden brown.
Dip it in the rose water and sugar syrup and keep aside.
Add the cold milk with corn flour and saffron to the reduced milk and microwave for another 10 minutes.
You will see that milk get creamy and thick (as thick as ketchup )
Let the milk cool for 15 minutes.
Pour it on the bread. Sprinkle some cardamom powder.
Dress it with almonds and raisins
Refrigerate for sometime. Don't keep in the freezer!
Serve slightly cold.
