1 medium sized eggplant bringals chopped.
1/2 medium sized onion
2 pods of garlic finely chopped
1 t spn of red chilli powder
1/2 t spn of garam masala
1/4 t spn of turmeric
1 t spn of mustard
1 tbl spn oil
3-4 tbl spns coconut milk
4-5 coriander leaves for garnishing
salt to taste
Heat oil in pan and add mustard seeds. wait for them to crackle.
Add the garlic and onions. Fry till onions get transparent.
Add the brinjals along with red chilli powder, turmeric powder, garam masala and salt. Sprinkle a little water and let the eggplant cook with closed lid till they become soft (say for 5-6 minutes). Toss occationally.
Add the coconut milk and cook for another minute.
Garnisgh with corriander leaves.
Serve hot with Phulkas
