Tindora/Ivy Gourd/Kovakkai Fry



Ingredients:-
20 tindoras (or 1 full frozen packet)
1 tbl spn sambar/rasam podi (if u don't have either of them you can use red chilli powder)
1/4 tsp turmeric powder
1 tsp of mustard
1 tsp of urad dal/black gram split
3 broken red chillies
3-4 curry leaves
salt to taste

Method:-
Add 2 tbl spns of oil in a pan and heat. Keep the heat in medium.
Add the mustard seeds and let it crackle and them add the urad dal (dont burn them, they should be slightly brown).
Add the curry leaves and red chillies.
Add the tindoras,turmeric powder,salt and add 1/4 cup of water. Cook with a closed lid for approx 10 minutes, occasionally toss them so that they dont burn. Cook till they become soft.
Add the sambar masala and fry with a little more oil (if u want) for 5-6 minutes.
Serve hot.
