Dahimirch Baingan.

One of my yummy creations. I find it hard to get our normal Indian brinjals in US, and the normal brinjal curry out of the eggplant comes out mushy and is disastrous. My hubby and sous chef, avi (who doen't like brinjals much) loved the recipe.

Ingredients:-

To marinate:
1 tble spn of red chilli powder
1 tble spn of sambar powder
1/2 t spn of turmeric powder
1 tbl spn of rice flour/corn starch
salt to taste
2 tbl spns of sour cream
half a cup of curds/yogurt
one large egg plant cut into slices as shown below (shown as marinated)

Marinate the above ingredients for half hour.

Ingredients For Fried onions:-

1 medium onion sliced
1-2 green chillies cut finely/sliced
1 t spn mustard seeds
1 t spn jeera powder
1 t spn of red chilli powder
salt to taste.

Method:-
1. Fry the onion mixture ingredients and fry till light brown and transparent 

2. Heat 2 tbl spns of oil in a non stick pan and fry the marinated brinjals/eggplant in batches.
3. Toss carefully and ensure they are crisp and well cooked 

4. Add them to the onions and mix well.
5. Garnish with fresh coconut and coriander leaves.
6. Serve Hot
