Brown Breakfast-Cheese and Mushroom Rösti for FCI

Seems like the monsoon as set it in. I love rain....it makes my day! So the color that express my mood is definitely brown. Brown always sets in a warm and inviting atmosphere, for example chocolate!!! It rained this morning and how couldn't I gorge on a Golden Brown Breakfast. So this is what I did...



Cheese and Mushroom Rösti (Pronounced Roschti)
This is a classic Swiss breakfast often had by farmers. I love the golden brown color of the potato layer and the melted cheese on the mushroom makes it heavenly.
This is made in a mini egg frying pan. You can make the rosti bigger if you wish.(the rosti is as big as the pan/skillet you are using). Some rosti recipes use raw grated potatoes. It depends, if your potatoes cook faster, then you may use them raw.

Ingredients:-
1 big potatoes
Mild cheddar cheese grated
2 tblespns of butter
salt and freshly ground pepper
1/4 t spn of rosemary and chives coarse powder
few quartered baby portabella mushrooms (as much as you want them to be in your rosti)
coriander/parsley-3 -leaves

Method:-

Boil (they shouldn't be overboiled) the potatoes. The potatoes should be cooked and firm.Grate them (big size).
Chop the coriander very finely and quarter the mushrooms.
Heat the skillet with butter. Fill the skillet with a layer of grated potatoes. Sprinkle salt and pepper.
Add mushrooms and coriander to form layer 2. Sprinkle salt,rosemary,chive and pepper.
Add the grated cheddar cheese to form layer 3. Sprinkle salt and pepper.
Add the last layer of potatoes.
Be careful while adding the salt. Make sure you do not over do it.
In medium flame, slowly cook one side till golden brown.
Then flip is slowly on to the other side and cook till the potatoes turn golden brown. You may flip it by transferring the rosti to a plate and the turning it back on the other side on the skillet.

Serve Hot with ketchup!
