Ingredients:-
20-25 medium sized okra chopped/sliced.
1 medium sized onion slit finely/diced.
1 tomato (smaller than onion) chopped
1 tsp jeera
1/4 tsp turmeric powder
1/4 tsp amchur powder
1 tsp coriander powder
1 tbl spn red chilli powder
1/2 tsp ajwain
1 tbl spn ginger-garlic paste
2 tble spn of cornflour/rice flour
5 tbl spns of oil to shallow fry
Salt to taste.
Method:-
Add the cornflour/rice flour to the cut okra. With wet hands, mix both and keep aside.This shouldn't be wet/a paste. The powder should lightly cover the okra.
Take a pan and heat 1 tbl spn of oil.
Add the jeera and ajwain.
Add the onions and ginger-garlic paste and fry well till onions get transparent.
Add the tomatoes and fry well till they dry up.
Add the bhindi and the rest of the 4 tbl spns of oil.
Add salt and all the masalas (red chilli, turmeric, amchur and coriander powder)
Let it fry well in low flame. Toss occasionally to avoid burning and actuate even frying on all sides.
Serve Hot.
