Aloo Palak

I am not very found of any kind of aloo gravy. And palak aloo is a dish thats normally semi gravy due to the tomatos and spinash (as both make the aloo soggy). I tried this dry aloo palak at home, which came out great.

Ingredients:-
3 medium sized aloo cooked and diced.
1/2 medium sized onion chopped.
1 tbl spn of giner garlic paste
1 cup of chopped spinash
1 t spn of mustard seeds
1 t spn of chilli powder
1 t spn of turmeric powder
1/2 t spn of freshly crushed pepper

Method:-
Heat 1 tbl spn oil in a pan.
Add mustard and let it crackle. Add the onions and ginger garlic paste and fry till the onions get transparent.
Add the chopped spinash and fry till, all the water they give out dries up.
Add the potatoes and the red chilli powder, turmeric powder, pepper, salt and mix well.
Add another 2 tbl spns of oil and fry well the potatoes becomes crisp uniformly in all sides (say about 10 mins).
Serve hot with rotis.

** tip:- must you add tomatoes, do not purree it or chopped it too fine. Slice it and add it after the onions. Fry them it they are cooked and dry.
