Ingredients:-
2 cups of rice
One big onion
Shahi Jeera- 1 tablespn
cardamon-2-3 crushed
coriander- few stems
green chillies-4-5
3-4 peppercorns
bay leaf-2
cinnamon -lil finger sized stick
star anise-2
cashews-5-6 (can add more)
2 tble spns of butter
1 tble spn of ghee
In a pan add butter and fry with jeera, peppercorns,bay leaves, cinnamon, and star anise.
Add the thinly sliced onions till they are golden brown . Fry in Low flame so that doesn't burn.
Add sliced green chillies and fry.
Add to washed basmati rice. For each glasses of rice add one glass of water-add 1/2 a glass of water extra at the end
Add Salt to taste.
Cook for one whistle in a pressure cooker or cook in the electric cooker(do not let it in the warm mode after cooking for long as the rice at the bottom might start to burn).
Mix one tbl spn of ghee before serving..
Garnish with finely chopped coriander and fried cashews in ghee.
